Our company was born through the vision of two women. Two women sharing the passion for food and the determination to get involved in a new venture,culminated in the decision to set up a dairy for the production of one the most precious Italian food excellences: Campania's Buffalo Mozzarella. The goal of this partnership is to promote the knowledge and the culture of Bualo Mozzarella, through the contribution of the experiences and skills of two women coming from dierent backgrounds, but both fully committed into this mission.This integrated approach has laid the foundation for the growth of female entrepreneurship in the world of Bualo Mozzarella, and today we can consider it a full-edged innovative idea. We have just maintained the best of tradition: the ancient skill of dairymen, theattention to the quality and the accrued knowledge acquired in more than 1.000 years of Mozzarella production.Innovation plays an essential role in our company, since it dierentiates our products from those of our competitors: thanks to production steps, raw materials treatment and cutting edge packaging, Vallebianca and Bufalosa products oer high-end organoleptic qualities, a long shelf life and the memorable taste of the true Bualo Mozzarella. Vallebianca Brand, packaged by hand with the apposition of a quality seal, exalts the craftsmanship of our products.Hand packaging has a higher cost if compared to heat sealing, because it requires more personnel involvement.Its natural positioning is to be found within high-quality food retailers, where the customers usually look for typical regional products that convey the whole sense of craftsmanship.Frozen is our frozen Bualo Mozzarella, which can keep its organoleptic and microbiological characteristics even after 1 year from production. Thanks to TQF (Total Quick Frozen) technique, a variant of the traditional IQF, it is possible to freeze the product using a minimal amount of preserving liquid, so that the product can be maintained in its natural habitat and can regain its freshness and its distinctive porcelain white colour, once defrosted.A highly versatile product with a 12 months shelf life, ideal for foreign markets and the HORECA segment, with the following advantages:Stable quality, available all year longOptimization of delivery timesLower transportation costsEfficient warehouse managementReduced product waste
